History
For more than ten years spanning the seventies and eighties, Meera Freeman worked with a company importing the most prestigious brands of Italian design furniture.
During her annual buying trips to Italy, she was frequently invited to meals in small villages where the various furniture factories were located and learned to love the food they served.
The Taste of Italy
The simple and delicious food that was prepared for the locals totally captivated her and she set about learning about the products and methods used to produce such taste sensations.
Over the years, her kitchen became a destination for visiting export managers and designers, tired of restaurant food and pining for some home cooking, as well as clients and friends thrilled to be eating dishes prepared with such passion and care.
Content of Classes
In her Italian cooking classes, Meera will show you how to select the best and freshest ingredients and will introduce you to extra virgin olive oils from various regions in Italy. Her handy hints on methods and techniques of preparation will enable you to serve authentic Italian food with a minimum of fuss.
The basic course covers pasta sauces, risotto, gnocchi and soup.
You will learn techniques for preparing veal, chicken and fish dishes and will begin your collection of antipasti as well as dessert favourites such as tirami su.
Shopping for Ingredients
Meera believes that it is just as important to know how to shop as how to cook and she will divulge the names of her favourite providores as well as her secrets of stress free entertaining.
In addition to the basic Italian course, Meera also offers four-week courses featuring seasonal produce.
She can also tailor a course of one to four weeks for groups of 12 to 15 persons with special dietary requirements.
